Homemade Tabbouleh

  • 1/2 red onion

  • 1 tomato

  • 2 scallions

  • 1/4 mint

  • 5 tblspn olive oil

  • 1 cup couscous

  • 1 head of romaine lettuce

  • 1/4 cup parsley


  1. Bring 1-1/2 cups water and 2 tablespoon oil to a boil, then add 1 cup couscous.

  2. Take the tomato, 2 scallions, 1/4 cup mint, 1/2 red onion. Mince them and combine in a mixing bowl and save for later.

  3. Take the couscous and drain it carefully. Take the couscous and the vegetable mixture and add them into a single mixing bowl.

  4. Add 3 tablespoons olive oil and 1/4 cup parsley to the mixing bowl and combine everything.

  5. Take the romaine lettuce and chop it into strips.

  6. Plate the lettuce then the couscous mix.

  7. Serve and Enjoy
